
3 Lentil Pancake
Lentils are a great source of fiber, folic acid, and potassium. Lentils are a staple food Item In our household. This Is my favourite lentil recipe. So easy, so nutritious, so delicious!
Ingredients
- 1 tbsp Red lentils soaked overnight
- 1 tbsp Brown lentils soaked overnight
- 1 tbsb Black Lentils soaked overnight
- 1 pinch grated ginger
- pinch turmeric
- 1 pinch blackpepper
- 1 garlic clove grated
- 1 pinch cumin
- 1 pinch coriander
- 1/2 cup kale, spinach, green onions, red onions, carrot, squash any vegetables finely chopped. I grate the squash and carrots
- 1 tbsp avocado oil
Instructions
- Wash and soak the lentils overnight. Wash again In the morning.
- Add vegetables and lentils into a blender with 2 tbsp of water, blend until thick consistency
- Heat a large skillet on medium heat, add a 1 tsp of avocado oil, pour batter onto heated oil on skillet. Batter should be around 5-6 Inches In diameter, even thickness.
- Cook for about 2-3 min on one side, flip onto next side!
